It's recommended to use UO Renessaince version of client, GodCclient is quite picky.
You can look up what files client needs using ProcessMonitor tool, file monitor tab and looking for "not found"

As for flying, it might be in exe itself.
"bank/templatestable.dat" contains definitions for mobiles, look up for dragon, there should be "script" section.
In "dragonai" script that's referenced in there, there's some calles of "enableBehaviors" and "disableBehaviors", it might be what you are looking for.

Thanks but the demodat files were already extracted. Here's what I get from my attempt to decompile scripts:

Nothing happens when I click Mass Decompile and if I choose another directory it keeps asking me for sdb.txt
